Combine all the ingredients in a planetary mixer with the paddle attachment for 2 minutes at low speed.
Cast the batter into the muffin moulds (about 70g of batter for each), then bake at 200-220°C for 15-20 minutes in a conventional oven.
To make delicious yogurt muffins you can just combine the batter to 300g of whole milk yogurt or fruit-flavoured yogurt."
