In Davide, and in his idea of pastry, these two aspects-that of rationality and that of creativity, blend to perfection inspiring deeply each of his recipes. 
Born into a family of ceramic sculptors and painters in Caltagirone, art and sculpture are part of his DNA and are reflected in each of his creations, leading him first to the study of artistic sugar, and then to the study of the new forms of pastry.

After winning several awards including the World Artistic Sugar Championship, the Pastry Championship and the World Cup of Ice Cream in 2024, Davide is now alongside IRCA Group as our Brand Ambassador.

In his workshop, discipline, order and elegance reign. These are essential characteristics that go beyond the presentation of the dessert, but affect every aspect of production in the laboratory, from the cleanliness of the workstation, to the creation of the recipe. 
But beyond rationality, for Davide every idea and every dessert tells a story of evolution and continuous growth that those who create have a duty to share, helping new generations to cultivate their passion and inspiring them through taste.


"Every dessert is a new emotion, creating means evolving and sharing one's ideas with many people. But the thing that gratifies me most is when many people then use my recipes, they use it in the lab, they find it really useful, and that makes me happy. Sharing has been part of my success, I have taught thousands of pastry chefs around the world."

You all have a chance within you, but it is important to respect the timing in order to mature in a healthy education. After 20 years of teaching and winning competitions, I assure you that I still have so much to learn and look forward to learning.
