YOGURT STICK WITH FRIZZZI POP PINK
Yogurt semifreddo stick with red fruits crackling couverture
|liquid cream 35% fat||g 800|
|TENDER DESSERT - or TENDER MIX||g 300|
|yoghurt sauce||g 140|
Mount in a planetary mixer cream, water and TENDER DESSERT/TENDER MIX until a soft but not completely mounted structure is obtained.
Add the yogurt sauce and water.
Softly mix the compound.
Half fill the proper silicone molds for sticks with the yogurt semifreddo, pour a right quantity of JOYCREAM FRIZZZI POP PINK , in the centre, then fill completely with more Yogurt semifreddo, smooth and put in the shock freezer.
Unmold the sticks and cover them with the FRIZZZI POP PINK covering.
Decorate with DOBLA decorations and put them in the freezer (-18°C)
